Peanut Cookies Note

First of all, Happy Hansik 1st anniversary! I was in Korea this time last year and OMG I didn’t update for a month, I’m such a ‘diligent’ blogger, haha! Actually, I’m thinking to stop blogging, for some reasons and I need a break! This is just a quick update, so I shall stop talking nonsense now.

How to make Peanut Cookies

I’ve made some peanut cookies, but couldn’t get the texture I want, I want it to be melted in my mouth! So here is just a note for my future reference.

Ingredients of my first attempt:

2 cups roasted peanuts (finely grounded)
1 cup all-purpose flour
1/2 cup icing sugar
1 teaspoons salted butter
1/2 cup corn oil
1 egg yolk

Pre-heat oven 180°C and bake 5 to 7 minutes.

First attempt is nice, but I feel something is missing.

Ingredients of my second attempt:

400g roasted peanuts (finely grounded)
400g all-purpose flour
200g icing sugar
1 teaspoons sea salt
1 teaspoons baking powder
275ml corn oil
1 egg, beaten

Pre-heat oven 180°C and bake 10 minutes.

Second attempt is nice too, but is harder and won’t melt in mouth.

Things that I must remember next time

– Don’t put baking powder.
– Less oil, peanuts, flour, icing sugar, oil 2:2:1:1 ratio.
– Use normal salt.
– Use peanut oil.
