Easy Pumpkin Bread Recipe

I’ve started my day making pumpkin bread. It’s so soft, tender and delicious! Life is so good if you can do things you like every day without stress, pressure and worries but how many people are actually doing this? I don’t know how long can I live like this, but I’m sure at this moment, I’m very happy. Stop for a while and think, make sure that everything you’re doing right now is really what makes you happy.

How to steam pumpkin

I’ve steamed about 500g of pumpkin here but only 100g of steamed pumpkin is needed for the bread. Steaming a pumpkin is much easier than you may think! Just cut the pumpkin into small pieces with a knife *be careful*, and use a spoon to remove the seeds and stringy innards from the pumpkin. Place the pumpkin in the steamer and steam 15 minutes. Then, use a spoon to remove the skin. Discard the skin. Mash it with a fork or spoon. Put aside.

Ingredients:

100g steamed pumpkin
1 tsp instant dried yeast
¼ cup warm water
200g bread flour
½ tsp salt
25g sugar
1 egg (lightly beaten)
20g butter

Method:

1. Stir and dissolve the instant dried yeast in the warm water. Leave for 15 minutes.
2. Mix bread flour, salt and sugar in a large bowl. Slowly add in the egg.
3. Add the mashed pumpkin.
4. Slowly pour in the yeast. Mix and knead.

I used a stand mixer fixed with dough hooks at speed 1 to mix the ingredients, speed 4 to knead the dough for about 30 minutes. If you do not have a stand mixer, use your hands and knead until the dough is smooth, thin and elastic will do.

5. Shape the dough into a big ball and cover with plastic wrapper.
6. Leave to rise for 1 hour, or until double in size.
7. Sprinkle some flour on the working table and place the dough on top.
8. Sprinkle some flour on the dough and use your hand to knock out the air by punching the dough gently.
9. Divide the dough into 4 equal portions and shape each piece into a small ball lightly.
10. Cover loosely with a damp cloth for 10 minutes.
11. Repeat 6 and 7.
12. Shape and place the dough in a non-stick bread pan.
13. Leave to rise for 1 hour, or until double in size.
14. Brush the surface with beaten egg.
15. Bake at 180°C for 15 minutes or until golden brown.
16. Gently flip the bread pan upside down, and shake it over a wire rack.
17. Place the pumpkin bread upright on the wire rack and allow it to cool before serving.
