Red Bean Steamed Bun Recipe

I ALMOST BURNED THE HOUSE DOWN twice in 30 minutes yesterday! I was vacuuming the floor and suddenly the wire of the power extension socket caught fire. And then, I boiled my mum’s pot dry. Luckily, it’s stainless-steel. I’ve learned something; never pour cold water into a hot dry pot.

How to make Red Bean Steamed Bun

Unusual Red Bean Steamed Bun. This recipe was inspired by Korean Mugwort buns I’ve mentioned in my *Travel Guides & Travelogues* – Jeju Island 3 days 2 nights.
Red Bean Steamed Bun

Ingredients:

200g red beans
100g cane sugar
3 cups bread flour
11g instant yeast
½ cup sugar
¼ cup corn oil
Water

Method:

1. Place red beans into a pot. Add 5 cups of water and bring them to a boil. Then, simmer for 1 hour.
2. Add sugar and mix well. Turn the heat off and let the red bean paste cool down.
3. Mix flour and instant yeast together. Add 1 cup of water and mix well.
4. Add sugar and corn oil, then knead the dough with hand for 10-15 minutes or until the dough becomes smooth and extensible.
5. Scale the dough at 25 grams each, round it and leave it to rest for 10 minutes.
6. Flatten the dough and place red bean paste at the center.
7. Wrap it. Then place each dough on a small piece of square grease-proof paper.
8. Allow them to rest for half an hour. Then, steam 10 minutes over high heat.
