Patbingsu

Ingredients:

Patbingsu Ingredients

No Ordinary Ice Cubes

One coconut
1/4 of a watermelon

Sweet Cane Sugar Red Bean Paste

200g red beans
100g rock cane sugar

Chewy Sesame Green Tea Rice Cakes

3 tea bags of green tea
150g glutinous rice flour
1 teaspoon of caster sugar
25g black sesame
25g white sesame

Chewy Plain Rice Cakes

150g glutinous rice flour
1 teaspoon of caster sugar

Other ingredients:

Kiwi, Banana, Strawberries, Durian, Rambutan, Mangoesteen and sweet nutmeg slices.

How to make Coconut Water Ice Cubes:

Coconut Water Ice Cubes

1. Separate the coconut water and the meat.
2. Simply pour the coconut water into ice cube trays and freeze it!
3. Purée the white and fleshy coconut meat in a blender. Keep the Purée in the fridge.

How to make Watermelon Ice Cubes:

1. Cut watermelon into small pieces.
2. Remove the rind and the seeds.
3. Purée the watermelon in a blender.
4. Pour the Purée into ice cube trays and freeze it!

How to make Sweet Cane Sugar Red Bean Paste:

How to make Sweet Cane Sugar Red Bean Paste

1. Rinse the red beans and throw out any that are damaged. Strain and place them into a pot.
2. Add 300 ml of water and bring them to a boil.
3. Simmer for 1 hour until the red beans have softened, add more water if necessary.
4. Chew a sample of the red beans. If there is something hard when you chew, you need to cook it longer. Otherwise, add rock cane sugar and mix well.
5. Turn the heat off and let the red bean paste cool down. Keep in the fridge.

How to make Chewy Sesame Green Tea Rice Cakes

1. Put 3 tea bags of green tea into a cup. Add 150ml hot water and let it cool down.
2. Slowly mix the glutinous rice flour with the green tea together in a big bowl. You may not need the entire cup of green tea, stop adding when the dough reaches the right consistency. Make sure that the dough isn’t too runny.
3. Add 1 teaspoon of caster sugar and knead the dough by hand for about 5 minutes. If you feel the dough is too sticky, add some more glutinous rice flour.
4. Roll the dough with your palms into a big rice flour ball. Then press the dough onto a waxed paper or plastic to flatten it down to about 5mm. Use pastry cutter to cut out the rice cakes.
5. Place the cut rice cakes on a paper and set them aside.
6. Carefully put all rice cakes into boiling water. Cook until the rice cakes float to the surface. It will take about 3 to 5 minutes to float.
7. Get ready a big bowl of cold water.
8. Put the cooked rice cakes into the cold water immediately and drain them.
9. Stir-fried both black and white sesame together.
10. Roll the cooked rice cakes in the fried sesame and transfer them to a plate.

The making is the same as above. Just add water to make the dough instead of green tea (without sesame).

This Patbingsu delivers heart-healthy nutrients.

Toothsome Fruity Patbingsu

1. Shave the “Coconut Water Ice Cubes” in the ice shaver.
2. Place the shaved ice on a dessert plate/bowl.
3. Add “Sweet Cane Sugar Red Bean Paste”.
4. Add some “Chewy Sesame Green Tea Rice Cakes”.
5. Add chopped strawberries, banana and kiwi.
6. Don’t forget your Coconut meat Purée. Pour 2 teaspoons of the Purée onto the ice.
7. It will taste better if you add 2 teaspoons of Soju.
8. Serve right away with spoon.

Feel the cold in your hand, smell its aroma and sense the texture in your mouth.

Sweet Crimson Watermelon Patbingsu

1. Shave the “Watermelon Ice Cubes” in the ice shaver.
2. Place the shaved ice on a dessert plate/bowl.
3. Add “Sweet Cane Sugar Red Bean Paste”.
4. Add some “Chewy Green Tea Rice Cakes” (without sesame).
5. Sprinkle some sweet nutmeg slices and serve right away.

Dare You Try Exotic Tropical Fruits Patbingsu recipe:

Get ready for a taste of heaven. In this recipe, I use plain ice cubes to make the shaved ice and “Chewy Plain Rice Cakes”. Instead of putting chopped strawberries, banana and kiwi, I’ve changed them to Tropical fruits of Malaysia – Durian, Rambutan and Mangoesteen.

Dare You Try Exotic Tropical Fruits Patbingsu

1. Shaved ice cubes in the ice shaver.
2. Place the shaved ice on a dessert plate/bowl.
3. Add “Sweet Cane Sugar Red Bean Paste”.
4. Add Rambutan (with seed removed), Durian and Mangoesteen.
5. Add some “Chewy Plain Rice Cakes” and serve right away.
Try some other ingredients like Kimchi, sweet corn and seaweed. Try it!
