How to make Apple and Raisin Cupcakes

Ingredients:
1 apple
200g self-raising flour
150g unsalted butter
120g brown sugar
125g raisins
3 eggs, lightly beaten
Method:
1. Line standard muffin holes with paper cases.
2. Sift the flour into a large bowl.
3. Melt the butter and sugar over a pot of hot water. Make sure the bottom of the bowl is in contact with the hot water. Stir constantly. The bowl will grow warm. Continue stirring until the sugar has dissolved. The butter will melt faster if it is broken up into smaller pieces. The whole process should take anywhere from 5 to 10 minutes.
4. Peel the apple and grate it into the butter mixture. Then, add raisins.
5. Pour the butter mixture in the flour, add eggs and stir with a wooden spoon until combined.
6. Divide the mixture evenly among the paper cases.
7. Preheat the oven to 180°C and bake for 15 minutes, or until the skewer comes out clean when inserted into the centre of a cake.
8. Transfer onto a wire rack to cool completely.
