Here are step-by-step instructions for making Almond Butter Cookies from scratch in 10 Steps (with Pictures). Almond has protein, fat, vitamins, iron, potassium and calcium. Almond Butter Cookies Recipe

Ingredients:

675g plain flour
½ tsp baking powder
½ tsp salt
100g almonds flakes
225g butter, cut into tiny cubes
225g sugar
1egg, lightly beaten
60 whole raw almonds
1½ tsp vanilla extract (optional)

Method:

1. Line a baking tray with baking paper.
2. Sift the flour, baking powder and salt together and set aside.
3. Grind the almond flakes finely in a food processor.
4. Add ground almonds into the flour mixture and mix well.
5. Add butter and mix until crumbly. Make a well in the centre.
6. Add sugar and egg and mix well until the dough is soft.
7. Divide the dough into small balls. Flatten each one slightly by pressing a whole almond onto it.
8. Place them on the lined baking tray.
9. Preheat the oven to 160°C and bake for 15-18 minutes, until a nice butter nutty smell comes from the oven.
10. Allow the almond cookies to cool on the baking tray for about two or three minutes, and after, transfer them to a wire rack to cool and serve or put them in an airtight container and keep at room temperature.

How to make Almond Butter Cookies

Note:

  • Adding some of the sugar from the recipe to the almonds would help them grind more finely.
  • Do not bake the cookies for too long or at a temperature that is too high. The cookies will turn out to be hard and dry.
  • If you find that the cookies dough is too dry to handle, add a little bit (1-2 tablespoons) of water or milk. You may add egg or softened butter instead.
  • Consider the sugar and butter amount carefully. If there is more sugar than butter, you will usually get a harder cookie, but if there is a little extra butter, you will get a softer, chewier cookie.
