Peanut Cookies Recipe

Today is the 8th day of the 1st month of the Chinese lunar calendar, no one will make this peanut cookies because everyone make it before the Chinese/Lunar New Year. I’ll show you how to make it and hopefully next year you make it your own. Homemade is always better, all you need is to get off your butt and bake.

How To Make Peanut Cookies

Peanut Cookies

Ingredients:

2 cups peanuts (finely grounded)
1/2 cup icing sugar
1 cup all purpose flour
1 teaspoons salted butter
1/2 cup corn oil
1 egg yolk

Method:

1. Stir fry peanuts until fragrant. Let it cool down.
2. Sieve icing sugar.
3. Mix peanuts, icing sugar and all purpose flour together in a big bowl.
4. Add butter, then gradually add in corn oil. Knead it until you get a smooth dough.
5. Roll into small balls and place them on a baking tray. (You may need two to three baking trays if your oven is small.)
6. Slightly beat the egg yolk then brush it on top of the peanut cookies.
7. Use a straw to press out a circle pattern on the cookies.
8. Pre-heat oven 180°C and bake 5 to 7 minutes.

Helpful Tips:

If you are Malaysian, you can buy the peanuts from local “Mang Chang Kueh” (peanut pancake) hawkers. If you don’t like too much of peanuts, instead of only 1 cup of all purpose flour, use 2 Cups. If you use unsalted butter, it’s better to add a pinch of salt in your recipe. Double the ingredients if you want to make more. Hope you like this homemade Peanut Cookies recipe.
