White Radish Broccoli Soybean Soup

Ingredients:

250g white radish
100g carrot
20g enokitake mushroom
50g soy bean
250g broccoli
1 tomato

Method:

Wash soy beans thoroughly, cover with water, and soak overnight or up to 6 hours. Drain beans and remove the hulls. Cut radish, carrot, tomato and broccoli into small pieces. Bring water to a boil. Add soy beans, cover, and simmer gently 1 1/2 to 2 hours or until tender. Add white radish and cook until soft and transparent. Add remaining ingredients and continue to cook until all the ingredients are cooked. Add salt to taste and serve hot.
