Bayers Belgian Waffle Maker

Good news for those who love homemade Belgian waffles, Belgian Waffle Maker now available in Malaysia. A reader left me a comment in my previous entry (Where to buy Waffle Maker in Malaysia: Takada Waffle Maker (ISB-068)) asked me that whether Takada made any other types of waffle makers, like Belgian. I guessed she was looking for a Belgian waffle maker. At that time, I could find only heart-shaped waffle maker under the Takada brand.

How to make Golden Crispy Waffles

  1. Before baking the first waffles of the day, use a pastry brush to lightly glaze the top and bottom waffle grids with vegetable oil. A light coating of non-stick cooking spray also works well.
  2. Close the waffle maker and plug it into a 220 – 240V AC power outlet. The red power indicator and green heating lights will turn on to indicate that the appliance is in heating mode.
  3. The green indicator light will turn off when the waffle maker is pre-heated to the baking temperature. This will take approximately 2 to 5 minutes and signals the appliance is ready to use. The red power light stays as long as the waffle maker is plugged to a power outlet.
  4. Open the waffle maker and pour batter to fill the lower cooking plate. If necessary, use a spatula to spread the batter into the corners of the grid. Caution: Cooking surface is hot. Always use protective, heat-resistant gloves when handling hot appliances!
  5. Close the waffle maker. The green heating light will turn on again. Do not open for at least 1½ minutes. Opening too soon will cause under-baked waffles to split, making them difficult to remove.
  6. Cook for about 3 to 6 minutes. If you want them darker, close the lid and continue baking until the desired color is achieved. The green indicator light may turn on and off during this time, as the thermostat adjusts the temperature for uniform baking.
  7. Once the waffles are cooked to your liking, carefully remove them from the waffle maker with a non-metallic utensil. Never touch the cooking surface with sharp, pointy or metal objects. This could damage the non-stick surface.
  8. If you want to make more waffles, you do not need to close the waffle maker and pre-heat again. Directly pour more batter onto the lower cooking plate and repeat Steps 4 through 7. If the waffles start sticking onto the surface, simply re-apply the cooking spray as indicated in Step 1.
  9. Once you are finished cooking, always disconnect the plug from the power outlet and leave the waffle maker open to cool before cleaning.

Note: When your waffle maker is heated for the first time, it may emit a slight smoke or odor. This is normal with many heating appliances and does not affect the safety of your appliance. However, it may affect the flavor or the first set of waffles you prepare. It is recommended that you discard these.

Classic Waffles

Ingredients:

1½ cups all-purpose flour
½ cup cornstarch
2 tbsp cornmeal (optional)
1 tbsp baking powder
1 tsp salt
3 large eggs, separated
2 tbsp granulated sugar
1¾ cups milk
½ tsp pure vanilla extract
½ cup (1 stick) unsalted butter, melted

Method:

1. In a large bowl, sift or whisk together flour, cornstarch, cornmeal, baking powder and salt. Set aside.
2. Separate the eggs, and whisk together egg yolks, milk and vanilla. Using a spatula, stir the milk mixture into the flour mixture, blending just until dry ingredients are moistened (there should still be small lumps – do not over mix). Stir in melted butter.
3. In a mixer bowl, beat egg whites until soft peaks form. Add sugar and continue beating just until stiff peaks form. Then fold in the beaten egg whites mixture to the batter above until combined.
4. Pour batter onto hot, greased waffle maker and bake as directed.

Makes about 5½ cups batter ( 4 to 7 waffles).

Buttermilk Waffles

Substitute the milk in the recipe above with buttermilk or even more flavorful waffles.

Toasted Pecan and Cranberry Waffles

Sprinkle chopped pecans onto the bottom grid of the hot, greased waffle maker. Pour your batter over the pecans and sprinkle dried cranberries over the batter.

Close the maker and bake as directed.

Helpful hints:

  • Cornstarch makes the waffles light and crisp on the outside with tender, chewy middles. If you do not have cornstarch, you could still make great waffles by omitting cornstarch and increasing flour to 2 cups. Bake as directed.
  • Separating the eggs as directed makes perfectly light, crisp waffles.
  • Do not overmix batter as this will result in hard waffles. Stir batter only until large lumps of dry ingredients disappear. No need for beating.
  • Fill bottom grid of waffle maker with enough batter to cover peak areas of the grid; about ¾ to 1 cup.
  • The optimal amount of batter to product a full-shaped waffle, without overflowing will vary with different waffle batters. Pouring batter from a measuring cup will help you gauge how much batter to use each time.
  • For more evenly shaped waffles, spread thick batters to outer edge of grid with a heat proof rubber spatula or other non-metallic utensil before closing lid.
  • To retain crispness, let the baked waffles cool on a wire rack to prevent steam from accumulating underneath.
  • When serving several waffles at one time, keep waffles hot and crisp by placing them on a rack in a preheated 90°C oven until ready to serve.
  • Already-cooled waffles can be reheated and re-crisped by returning to a hot waffle grid. Place waffle on grid so grooves match up; close lid and heat for 1 to 2 minutes, watch carefully to prevent burning.
  • Baked waffles freeze well. Cool completely on wire rack. Store in a plastic freezer bag or in covered container, separating waffles with wax paper. Reheat frozen waffles in toaster oven, oven or toaster until hot and crisp.
