Barley Winter Melon Porridge

Ingredients:

250g winter melon
50g barley
100g minced pork
20g ginger

Method:

In a pot, bring water to a boil. Add barley and return to boil. Reduce heat to low, cover and cook 45 to 55 minutes or until barley is soft and fluffy as it absorbs the water. Add ginger, winter melon and minced pork. Stir occasionally. Add salt to taste and serve.
